For KKB, Chef Wiedmaier — proprietor of 10 restaurants in Washington, D.C., Virginia, Maryland, and Atlantic City — has crafted some of the most delicious and memorable food you’ll ever find in a concert venue. His “retro refined Americana” cuisine is made up of throwback dishes like iceberg wedge salad, deviled eggs, and shrimp ’n’ grits — the sort of dishes you know and love and come back for time and again, but here treated to the kind of detail work you would expect of a classically trained chef.
